Grain Free Vegan Mini Waffles

Ingredients
- 1 cup of almond flour
- ½ cup of tapioca flour
- 1 teaspoon of baking powder
- 2 ripe bananas
- ½ cup of almond milk
- 1 flax egg (1 tablespoon of ground flax seed mixed with 3 tablespoons of water)
- ½ teaspoon of Vanilla Bean Powder
- Maple syrup and fresh berries to serve
Instructions
- In small bowl, combine the ground flax and water and mix. Set it aside to congeal.
- Mash the bananas with a fork until smooth. Add the almond milk to it and whisk it until smooth.
- Add the congealed flax egg to the milk mixture and whisk it in.
- Add the baking powder, almond flour and tapioca flour and gently fold it in until there are no more dry spots and the batter is thick and smooth.
- Preheat your waffle iron as per the manufacturer’s instruction.
- Place ¼ cup of batter in the center of the iron and close the lid. Let it cook for 7 to 8 minutes on medium heat level or until the waffles are crispy on the outside.
- Repeat until all the batter is used up.
- Serve warm with maple syrup and fresh berries.
Notes
- These waffles takes a little bit longer to cook than conventional waffle recipes. You know it is done when the outside is golden brown and crispy and you can take it out without ripping the waffle.
- The key ingredient in this recipe is ripe bananas. The riper, the better. The bananas help keep these waffles moist, even when the outside is crispy. If the bananas that you use aren’t sweet enough, feel free to add a tablespoon of maple syrup in the batter.
