Basil Pesto with Parsley and Walnuts

Ingredients

  • 1 cup fresh basil leaves
  • 1 cup fresh parsley
  • ¼ cup walnuts
  • 1 tablespoon lemon juice
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • ¼ teaspoon sea salt

Instructions

Combine the basil and parsley leaves along with the walnuts, garlic, lemon juice and olive oil in the bowl of a food processor and process it till smooth. You will want to add a tablespoon of water if the pesto is too thick.

  • 2 cups fresh basil, packed

  • Juice of 1 lemon
  • ¼ cup fresh parsley (optional, for extra freshness)
  • 2–4 tablespoons water, or more as needed
  • 1–2 tablespoons fresh lemon zest (optional)
  • ½ teaspoon sea salt (optional, to taste)
  • Freshly ground black pepper (optional)

Instructions

Add all ingredients to a food processor or high-speed blender. Blend until smooth and creamy, adding water 1 tablespoon at a time as needed to reach your desired consistency. Taste and adjust the lemon, salt, or water as desired.

Serve immediately or store in an airtight container in the refrigerator.
